Kid-Friendly (and Healthy!) Recipes: Part 1

In recent blogs, I have highlighted the growing concern of childhood obesity, childhood eating habits that develop into lifelong eating habits, and of course, the curse of sugar-loaded products. I came to the conclusion that focusing on the problem isn’t enough without a practical solution. I’m going to share recipes in the next few blog posts that are designed especially for kids but are so tasty, they’re great for grownups too.

I have scoured the internet to find lots of meals that are very tasty, quick, easy and affordable, and offer a great balance of valuable nutrients and vitamins that are essential to our kids health. Try them out; I know your family will love them.

Oven-Baked Almond Fish Sticks

(serves 4); costs about $3 per serving

Ingredients
1 cup crushed almonds
1/2 cup crushed bran flakes cereal
1 tablespoon wheat germ
1 teaspoon sea salt
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon oregano
2 large eggs
2 teaspoons olive oil
1 pound cod ( or any white fish) rinsed and cut into 1-inch by 5-inch pieces

Directions
1. Preheat oven to 425 degrees F.
2. Mix the almonds, bran flakes, wheat germ, sea salt, garlic powder, cayenne pepper and oregano together in a medium bowl. Crack the eggs into a separate small bowl and beat until frothy.
3. Coat a baking pan with the olive oil. Dip the fish sticks first in the egg mixture, and then into the almond mixture. Place the fish sticks on the prepared pan.
4. Bake until lightly browned, 10 to 15 minutes.

(Prego makes a very tasty no sugar added Marinara sauce; just add fresh finely-chopped Basil and it quickly becomes amazing).
